Pitocco Family Meatballs

Ingredients:

  • 1 pound Lean ground beef
  • 2 eggs
  • olive oil
  • medium onion diced
  • 2 1/2 teaspoons minced garlic
  • chunk of day-old Italian bread. Moisten it with water & squeeze out liquid
  • ¾ cup grated Pecorino Romano cheese
  • ½ cup chopped flat leaf parsley
  • ½ cup breadcrumbs
  • salt/pepper

Directions:

Pre-heat oven to 375 degrees

In a pan sauté the onion and garlic with some olive oil until soft. Let it cool.

Place all ingredients in a bowl and mix well

Form into golf ball size meatballs or larger if preferred

Place on a cooking sheet lined with parchment and cook 20 minutes at 375 degrees or until done. Let the meatballs cool. 

Put meatballs into a baking dish & add your favorite Cent’Anni sauce & bake at 375 until internal reaches approximately 165 degrees. 

Serve with your favorite pasta or enjoy as a "meatball splash"...several meatballs covered in Cent'Anni sauce with melted mozzarella & grated Parmigiano
