Ingredients:
Serves approximately 4
For this recipe, you'll need a veggie spiralizer. If you don't have one, you could use a grating board to manually shred, although the texture/spiral will be different
- 3-4 Zucchini (depending on size)
- (1) jar of your favorite Cent'Anni sauce
- grated or shaved Parmigiano
- 1-2 tsp olive oil
- salt and pepper
Directions:
Bring Cent'Anni sauce to a simmer
While sauce heats, use a veggie spiralizer to create Zucchini noodles, aka "Zoodles"
For extra flavor & better consistency, lightly pat the Zucchini noodles dry to remove some moisture, then heat 1-2 tsp olive oil in a med-high heat skillet & add Zucchini noodles. Lightly season with pepper & garlic powder, if desired. Do not add salt as it will release extra moisture.
Tips - Don't overcrowd the pan or cover with a lid. Be sure to not overcook, as the Zucchini noodles will become mushy. The goal is to lightly heat them but still keep a firm texture.
Add zucchini noodles to individual bowls & spoon over desired amount of Cent'Anni sauce
Finish with grated or shaved Parmigiano
